Absolutely! You must remove all brain matter and flesh from the head. If a shoulder mount is being done, then we suggest cutting the skull cap around the antlers. You don't need the entire skull for a shoulder mount. Remove the cape in a "Y" pattern starting from behind each antler and meeting in the middle to a straight line down the neck. Make your diaphragm cut somewhere behind the ribs and around. The important thing is that no meat crosses the border.
